Why is the V60 the benchmark for specialty pour-over coffee?

The V60 (manufactured by Hario in Japan) gets its name from its 60-degree conical angle. Its internal ribs allow air to circulate between the filter and the cone, preventing the paper from sticking to the wall and slowing down the flow. The result: homogeneous extraction, a clean, bright coffee that expresses the acidity and fruity aromas of a quality bean.

Ratio and Grind Size: The Two Foundations

For a 250 ml cup, use 15 to 16 g of coffee for 250 ml of water (approx. 1:16 ratio). Adjust to your taste: a 1:14 ratio will give a more concentrated and full-bodied coffee, a 1:17 ratio will be lighter and have a longer finish. The grind size should be medium to medium-fine. The practical criterion: the total extraction time should be between 2 minutes 30 seconds and 3 minutes 30 seconds for a 250 ml cup.

V60 Recipe Step-by-Step

1. Rinse the paper filter with boiling water directly in the V60 placed on your cup. Discard the rinse water.

2. Add the ground coffee, level the coffee bed, and create a small well in the center.

3. The bloom: pour twice the weight of the coffee in water (30 ml for 15 g) at 93°C. Wait 30 to 45 seconds.

4. First main pour: pour slowly in a spiral up to approximately 150 ml.

5. Second pour: pour up to 250 ml in a spiral.

6. Remove the filter once the water has completely drained. Total time: between 2 minutes 30 seconds and 3 minutes 30 seconds.

Most Common V60 Mistakes

Water too cold: below 90°C, extraction is incomplete. Aim for 92 to 95°C.

Coffee not fresh enough: without the bloom, degassing occurs during extraction. Use coffee roasted less than 4 weeks ago, as in our filter coffee range.

Pouring too fast or unevenly: maintain a slow and steady flow.
