The Origin
The Jockos Coffee project was born from a detour. In 2018, during a road trip to Seattle, I tasted my first Chemex. I had never imagined that a coffee could be so precise, sweet, and clean. A few months later, in Stockholm, Café Pascal introduced me to a coffee with notes of passion fruit. With every subsequent trip, I sought out micro-roasters who took coffee seriously. Jockos Coffee is my way of bringing that level of excellence to the Hauts-de-France.
Our Approach
A few deliberate choices.
- We roast to order. No stock sitting idle in bags. Each batch is roasted within the week and then shipped within 3 days.
- We roast light to medium. To reveal the aromas, not to mask them. Dark roasting is used to hide bean defects or to accommodate poor extraction. We don't play that game.
- We sell single origins and blends. Single origins to explore a terroir, a producer, a process. Blends for daily consistency and reproducible espresso.
- We support professionals without exclusivity contracts. We prefer a coffee shop to return by choice rather than by commitment.
- We say what we know, we don't embellish. If a coffee has a defect, we say so. If a method is unsuitable for your equipment, we say that too.
Who I Am
I am Jacques Lefebvre, founder and roaster of Jockos Coffee. My approach is inspired by the technical rigor of Scott Rao, the work of Lance Hedrick on extraction, and the philosophy of radical transparency from Prodigal Coffee. I ensure that every bag delivered contains the necessary information to understand its contents: country, producer, variety, process, altitude, roast date.
Who We Work With
Our coffees come from producers and cooperatives selected for the quality of their work and the traceability of their supply chain.
- Pérez Family (Finca La Esperanza, Colombia): for the Amarillo and Rojo lots, two coffees grown in Huila.
- Guji Region (Ethiopia): for Rubí, a high-altitude natural coffee.
- Finca Bethania (Nicaragua): for an SCA 88.5 natural coffee from Nueva Segovia.
- Direct sourcing or via specialized importers who practice fair trade and publish their purchasing prices to producers.
